Stovetop Oatmeal Cookies — a la Lola M Schmelz

(this is a double recipe)

2 sticks margarine
2 Tbsp corn syrup (light)
1/2 Cup cocoa powder
1 Cup milk
4 Cups sugar

4 Cups Quick-Cook Oatmeal
1/2 Cup (good) peanut butter

combine 1st 5 ingredients in heavy saucepan. Heat on Medium to Medium High heat until at a ROLLING boil, stirring constantly. Continue stirring at rolling boil for 3 minutes. Remove from heat. (put on cold burner)

Stir in oatmeal and peanut butter. Return to Rolling boil continuously stirring for 1 1/2 minutes. remove from heat. (turn off stove).

cool to touch. Stir quickly and drop by spoonfuls onto waxed paper OR, grease a pan/place parchment paper or waxed paper in shallow pan, and spread out.

Cookies are done when cool and “dull”–no longer shiny.

Makes enough to share with maybe 1 friend. they are addictive like crack or meth, so…unless your bottom wants to spread a bit, well, you know. store in an air tight container.
